Dark Chocolate Coconut Cakies


Post number three and we get into why, besides have a cute alliteration, I chose the title Primarily Primal...I have a week spot for treats, particularly dark chocolate and ice cream (going back to my Wisconsin dairy roots I guess).

Also, I hate days when I decide to bake.  As much as I love having primal approved baked goods in the freezer for those cookie cravings, I end up eating so much of the ingredients, batter, etc. that by the time they're done baking I'm already way over sugared.  But it smells to good in my apartment to not try the fresh out of the oven final product.  Alas, a weeks worth of sugar later (and a huge sugar crash looming in the future) I'm sharing my first cakie (cookie+cake=cakie...get it?) experience.

I got the recipe for dark chocolate coconut cakies off of Multiply Delicious.  I just discovered the site earlier this week so this is the first recipe of hers that I'm trying and I have to say it's a success.  I'm excited to try her other recipes.

First, disclaimer: I am incapable of following a recipe to completion.  I always tweak something usually in the form of more coconut than the recipe calls for (even if the recipe doesn't call for any) or more chocolate, or whatever it is that I need to use up before it goes bad.



Today I used about 6 oz of chocolate (Endangered Species 72% cocoa...their 88% cocoa is my favorite easy treat!) instead of 3-4.  You know how I mentioned that I do a lot of snacking when baking?  So maybe it wasn't actually 6 oz by the time it got to the cakie.  Most of the extra chocolate that did make it on was used when I added a square onto the top of each cakie after I'd formed them so they would melt when they were cooking.  In the future I'll probably stick with 88% cocoa as these were already pretty sweet with the dates, banana, and pumpkin.  I also almost double the amount of coconut used as well.

These turned out really well (cake-like just as promised) but I feel as though the coconut flavor ended up being a little over powered by the banana and pumpkin.  Still a good base of a recipe and maybe something I'll play around with modifying more in the future.



A side of coconut milk ice cream melting on top of the warm cakies was a great addition.  I know, not totally primal, but 80/20 rule, remember?  And ice cream was made for warm cookies...or any time.  If you want to be a little healthier I supposed a cold glass of coconut or almond milk would work too.
