Moroccan-Asian-Pacific Fusion
I'm so in love with how this turned out I couldn't even wait to share. I'm not sure if my love for it is a proprietary parental love...like I'd love it even if it came out burnt brown and lumpy because I invented it or because it's actually yummy, but I do believe its one of the favorite recipes I've come up with.

Island Time Salad
Happy Valentine's Day/Galentine's Day/Singles Awareness Day/Whatever holiday you're celebrating!
So since I'm supposed to be somewhere warm right now and not in the frigid north east I thought I'd post something we made while we were in the Caribbean (not sure if it'll make me feel better or worse about the fact that I'm snowed in). I'm starting to think the weather gods have it in for me and my travel plans. It took us three different itineraries to get down to St John in January (thanks Polar Vortex) and this time my trip was cancelled completely since the earliest I could get to Florida would be midnight Sunday in to Monday and since I'd leave Tuesday it's not quite worth it.

Chicken Roll Ups
Guess what! Guess what! Guess what!!!!!
It's kumquat season!!! And I am so beyond happy about that. Don't get me wrong, raspberries are still my favorite fruit, but kumquats are awesome...and fun to say...kumquat!
So, like most people my eating habits went to hell (well my definition of hell but I'm sure it could have been way worse). With all the holiday eating out and traveling it's hard to control what you eat or explain to people that while potatoes are gluten free you really don't want one...or that bowl of rice...or that disgustingly sweet milk chocolate, so you eat it. Also, I've discovered I have a bad habit of just eating what's on my plate when I'm not at school. It's totally fine for me to leave a half eaten piece of something in the fridge and come back for it later. When I'm not at home it's either just weird to wrap two bites of steak or worse yet someone (you know who you are) might eat it before I get back to it.

Cauliflower Mac and Cheese
It's been awhile I know....Senior year is kind of a witch (it was just Halloween, I swear I wasn't trying to imply the use of any other word!). Good news though, I think my course schedule next semester is going to be a bit lighter which means more time to cook and even more excitingly time to actually sleep!
