Chicken Curry


Did you know weekend before last was Canadian Thanksgiving?  I wouldn't have known had I not been in Canada.  No, I wasn't just skipping class thank you very much.  It was fall break and my dad had had meetings in Toronto so we met in Canada rather than coming home.  Although if I think about it travel time is less to get to home than it is Toronto, or New York City, or Boston (by plane too).  Basically unless you're going to another middle of nowhere, it's easier to get to Wisconsin...keeps me out of trouble I guess?

After spending a couple days in Toronto, and giving thanks for a Packers victory (here's to another on American Thanksgiving?), we went to Niagara on the Lake and did some wineries and sight seeing there and then my parents drove back to school with me and we did some finger lakes wineries along the way.  I'm all for buying local, but was really disenchanted with the local wineries after this weekend.  Niagara had some really great wines and I'm bummed I can't get them here because so much of the wines out of the finger lakes get sooooooooooo sweet.  I get a sweet riesling, but a sweet cab sauv?  Not that I'm complaining, there are still some great reasonably priced wines and it's kind of beautiful here.

So this weekend I got crafty and made myself a chalkboard fridge, and of course started studying for my one prelim (score!) this semester in simulation modeling and analysis and made a sector loading plan and a factory layout for my design of manufacturing systems project and made my house of quality for model based systems engineering...and didn't do anything for technical writing.  Have I scared you away yet with enough big engineering words?  No?  Then you get to hear about my fridge.  I went to the craft shop on Friday and got chalkboard paint and some pieces of poster board and painted them and then stuck them to my fridge.  Yeah I know not super creative, but it was fun, and now my fridge is most likely cooler than yours.  I can write secret messages on mine...or just remind myself to eat something before it goes bad.

Speaking of eating, you want my curry recipe right?  I love curry powder because it's such a simple way to make it look like you're this totally cultivated, refined, cultured chef when in reality you light stuff on fire in the broiler on a regular basis.  If you are dangerous with the broiler I recommend finding another way to cook the chicken...

Ingredients

  • 2 Chicken Breasts
  • 3 Chicken Thighs (they were the chicken parts I had...I'm sure you could adjust accordingly)
  • Coconut Oil
  • 1 Onion
  • 1 Green Bell Pepper
  • 2 Cloves of Garlic
  • 2/3 Can of Coconut Milk
  • 3 Tbl Tomato Paste
  • 1.5 tsp Curry Powder
  • 1/4 tsp Ground Turmeric
  • 1/2 Lime Juice
  • 24 Grape Tomatoes
  • Red Pepper Flakes (optional)
  • Basil Leaves chopped (optional)

Directions

  1. Dice chicken into 1 inch pieces
  2. Broil chicken, Breasts for 20 minutes thighs for 30ish
  3. Chop onion and green pepper, cut cherry tomatoes in half, dice garlin
  4. In a fry pan add coconut oil and saute onion and green pepper until the onion begins to soften
  5. Add garlic and saute for another minute
  6. Add coconut milk, tomato paste, curry powder, turmeric, and red pepper flakes and boil for 5 minutes
  7. Add chicken, tomatoes, lime juice, and chicken simmer for another 5 minutes
I'm sure cauliflower rice or zucchini noodles would make great sides but it's good alone too!
