It's been awhile I know....Senior year is kind of a witch (it was just Halloween, I swear I wasn't trying to imply the use of any other word!). Good news though, I think my course schedule next semester is going to be a bit lighter which means more time to cook and even more excitingly time to actually sleep!
This is a recipe I've been working on for awhile...I'm kind of (ok totally) in love with it. New favorite, hands down. Since I'm so in love with this recipe I wanted to perfect it before I posted it...and by that I mean I wanted plenty of excuses to taste test.
Cauliflower is a vitamin power house loaded with Potassium Vit C and B6 and it's yummy. The other thing I love about this recipe is that 1 head of cauliflower usually equates to three servings for me. I can easily fry up a bunch of cauliflower rice and store it in the fridge and later in the week really quickly and easily pull some out throw it in the skillet with some cheese and have a fabulous snack. Also you can freeze the cauliflower after you rice it (before cooking it) for another way to shorten the cooking process.
Also, quick note all the ingredients are for 1 serving, scale accordingly. This isn't one of my most photogenic foods but it's what's on the inside (of your mouth) that counts right?
Ingredients
- 1/3 Head of Cauliflower
- 1/4 c Goat Cheese (just under 1/4 c)
- 1/8 c Shredded Parmesean
- I really like my cheese I'm sure less would work sharp cheddar is also nice
- 1 Clove Garlic
- Salt and Pepper
- Red Pepper Flakes
- Palm Oil
- Butter
- Onion (optional)
- 1/4 Red Pepper (broiling them first adds a nice flavor) (optional)
- Basil Pesto (optional)
Directions
- Rice cauliflower in a food processor
- Coat bottom of fry pan with half butter half palm oil (you'll probably need to add more butter while cooking) over medium heat
- Add diced garlic and red pepper (diced onion too) and saute until red peppper softens
- Add cauliflower and saute until al dante
- Reduce heat to low
- Add more butter (yum)
- Add cheeses (and pesto)
- Add salt, pepper, and red pepper, to taste
- Serve
